Watermelon Chia Fresca
Serves 4 and takes about 10 minutes to make
Mix together chia seeds and water in a large glass and allow to thicken for about 10 minutes, stirring occasionally, until a gel forms.
In a blender, blend watermelon and water until smooth. Strain pulp. Add all other ingredients.
Add chia mix and serve immediately or chill in the fridge.
